RESTAURANT PROFILE

How long have you been open for?

We bought the premises in January 2006 and opened in March that year, so it’s been almost 4 years.

In this time, have you undergone any recent refurbishments?

We have just finished an exciting renovation which extended our bar lounge area. There will be an entire floor dedicated to bar enthusiasts and cocktail lovers as well as a delectable bar food menu to tempt our diners. It is open til late every day & night and has a groovy, relaxed social ambience.

What is the atmosphere like? What does your restaurant look like i.e.: furniture, lighting, colours, art etc?

Its very modern, relaxed with French sophistication. We have antique crystal chandeliers and white marbled bars. We create a comfortable casual dining experience through our pearly pastel walls, hot pink pashminas and fuchsia oriental lilies – even our staff wear pink shirts! It’s not too feminine – it’s chic.

Do you have outdoor seating? If so, do you have heaters?

Our concept is all about relaxed outdoor dining – it’s very European with modern flair! We have a soft lounge area for the coffee & cake (or Frangelicos on a Sunday) enthusiasts and outdoor seating area for diners which is great for relaxing lunch in the sun or dinner! We do have heating and air-conditioning.

Can you give me a brief outline of why your restaurant stands out?

We are modern and a fresh injection into the Double Bay restaurant scene. Our team is dynamic; our cuisine is accessibly gourmet, value for money and pretty as a picture! Our infused martinis and wine list is extremely luscious and our décor is simply gorgeous. We cater for all aspects of dining from a ‘lunch friendly’ menu and to the Head Chef’s casual fine dining menu from 6pm. We cater to large celebratory group functions with our delicious canapés packages and also to foodie’s with our exclusive ‘Degustation’ menu. We have great $25 lunch specials which include a glass of Wild Oats wine for those that would like a delicious fuss free meal during the day.

Do you have a mission statement?

Relaxed, sophisticated and accessible casual dining.

What is the name of your head chef, how long have they been in the industry and what are his/her specialties?

Head Chef – Tim Fisher. Tims background is italian style meeting modern australian cuisine. He has been in the industry for 15 years, and there is no doubt that his specialties are hand made pastas, and perfectly cooked seafood.

He joined the Pink Salt team at the beginning of 2009 and has already gained praise for his fare of food.

Does your head chef have any mottos that they go by or any advice about making delicious meals?

Tim invites guests to memorable dining experiences by introducing a sense of whimsy to the staid structures of first class cuisine and by bringing a contemporary flair to dishes that are comfortingly familiar yet daringly delicious.

What are the most popular dishes on your menu?

From our sashimi of Tasmanian salmon to the confit duck with apple gnocchi for bistro lunch there are many a dishes to make your mouth water. For the exquisite food and wine experience come and try the twice cooked pork belly or the Seared scallops, baby calamari stuffed with blue swimmer crab and creamy champagne foam for a dinner delight. And of course, don’t forget our pink desserts!

Do you cater for vegetarians- if so, with what meals?

Of course, we dedicate a few dishes on all our menus to vegetarians and the Chef may also amend dishes on the evening to accommodate any dietary requirement. We have Sweet corn soup with baby shiso and basil oil and Pink Salt pumpkin and fetta ravioli, green asparagus burnt sage butter and shaved aged parmesan only to mention a few..

If you serve wine, what are some of the popular ones on your list?

We pride ourselves on our yummy infused martinis – the most popular is the signature watermelon and rose-petal martini, however our New Zealand wines are very popular and our course our French Piper Heidsieck pink champagne!

Why the chosen location? What do you like about the surrounding area?

Double Bay is sophisticated, neat and fashion forward. We feel our food concept goes hand in hand with that environment and suits our patrons perfectly! We also have very lovely neighbours – we all support each other! It’s great for group dinner wanting to get out of the city or ladies shopping in the area stopping by for champagne.

What do your customer’s comment on most about your restaurant?

All of the above! But especially our home-made pink fluffy cupcakes. They are a perfect for a birthday booking or even to order as a cake! You can order boxes of them through the restaurant or have them as a take-away option after your dining experience. Pink Salt has also been awarded the Customer Service Institute of Australia’s Best Customer Service award in Hospitality 2008.

What can you tell me about your staff?

Dynamic, friendly and of course they wear pink shirts! We encourage our staff to talk to customers and be educated about our food and wine. Pink Salt is a great brand and we have ideas of expansion. The staff are our Ambassadors and bring to life all that is the Pink Salt experience.
